Shish Kebab

Fab barbecue food to enjoy in the summer, healthy and yummy … you can stick any veggies on it as well …

Ingredients
2 lb. leg of lamb
1 Tbs . olive oil
1/2 lemon
Salt and pepper
1 medium onion, sliced
3 medium tomatoes, sliced
Bay leaves
Green pepper (optional)
Eggplant (optional)

Method
Cut the meat into 1-inch cubes. Mix olive oil and lemon juice and rub into meat. Place in dish, sprinkle with salt and pepper, and cover with slices of onion and tomatoes and a few bay leaves. Place in refrigerator for 4 or 5 hours.

Arrange meat on skewers with tomatoes and onions, alternating. Add an occasional bay leaf. Broil over charcoal, but may also be done over an open wood fire or in an oven broiler. Green pepper and eggplant may also be inserted on skewers.

    Nice looking dishes. Have you thought of changing the copyright restriction to Creative Commons so that people can use your pictures non-commercially as long as they credit you? For example, my photos are under creativecommons.org/licenses/by-nc-sa/2.0/deed.en_CA

    Hey, Thanks for comment above. We have not thought about this and yes it is a great idea. The ethos of Rexipe.com is to come and share recipes in a communal way so this would add to ethos of what we are trying to create … I will discuss with the guys and thanks again.

    Glad to hear you and the rexipe guys are thinking about sharing the photos also. At the end of the day, some of the people who like and use your photos will link back to you and that is a great way to create a community.

    For me, I make it a habit to link back to all the Creative Common photos that I use in my blog. To give credit to the photographer and also give credit.

    I am so pleased you like the site, it has been a labour of love and between the three of us we worked on it part time and happy we managed to make it public.
